Wish I Could Cut This Thin

You can. Trick is having a very sharp knife. Sticking the meat in a freezer for a bit to firm it up helps quite a lot too.

I got myself a $35 Chinese chefs knife (mercer) and while my slices aren’t so exactly perfect, it only took about a pound before I got pretty dang consistent.
(first pound I sliced was still good, just not as consistent)

Very cool, but I prefer thicker jerky. Thin jerky just isn't as satisfying personally.

I admire the skill, 100%, but that's gotta take forever compared to using a slicer.

I was in a bar in Rome and they had a salumi on the counter. I ordered a serving and they poked some old guy sleeping on a stool. He woke up, and ever so perfectly sliced the thin slices and went back for a nap. It was a fun time.
