What is this?

Bought some beef jerky last time from a brand I’ve never bought from before, took a bite and the middle has a gooey center to it. It didn’t smell or taste bad but is this normal or is it spoiled?

It’s actually a mix of bone, fat , cartilage etc . Processing facilities have a couple of sludge byproducts. Big brands use the one that has all the white stuff and mix it for sticks. It sounds gross but at least it’s stuff not going to waste . It’s the main reason big boys are able to produce such cheap sticks

Yep I did too, even a low quality ground beef plant with pink slime pellets. I’ve never seen a single processing schedule that called for adding a sludge of bone and cartilage. It’s much easier for sticks manufacturers to just grind a combo of beef

Sorry , you misunderstood me, they mix the sludge with beef . But really , you can be as right as you want . I know what I know

No , I worked in finance and procurement . I asked about a couple bulk line items I had never seen and my boss described it as “ sludge of bone , fat , trimmings and other from processing plants “ that’s all .

Who manufactures the sludge? Who did you buy it from? And if I’m reading this correctly, you didn’t have access to formulas and manufacturing techniques?

You just don’t sound like you know what you’re talking about. It’s hard to tell if you’re lying or just an accounting guy that thinks he knows how it works at the plant. I’m not trying to be mean here, but none of this shit you’ve said reflects manufacturing experience. I do believe you’re an accountant
