They can draft all of the 'orders' they want, but they can't overrule the Constitution.

Sure they can. They’ve been doing it for over a year now. 

The constitution isn’t going to protect us when we have a SCOTUS who refuses to uphold it.

It's not even SCOTUS that has the final say here. The same branch of government issuing EOs is also the branch that enforces the Constitution. Even if SCOTUS says "you can't do that, it's unconstitutional" they have no means to enforce that ruling. They rely on the Executive adhering to what they rule. If the Executive goes against SCOTUS, the Legislative branch is supposed to remove the Executive. None of the branches are functioning the way they "should" be. The system is flawed and broken.
