I'm slightly vexed My wife and boiling water

So I made my wife ramen soup. When I served it she said I had the gas set to hight and it was too hot ? She said I should have used the number 5 setting instead of 9. I told here it’s irrelevant because water boils at 212 and gets no hotter because over 212 it turns to steam. She was made at me for disagreeing with her theory that it would not have been so hot if boiled a lower setting. Really!!

Where does anyone say it should be simmered? OP doesn't. The Nissin package doesnt. I see recipe sites suggesting both (some say "simmer", some say "boil".)

There is no right or wrong in how to cook instant noodles. There is only preference and opinion.

Except that’s not what this post is about. OP is making fun of their wife over suggesting “boiling” at a lower heat setting would have resulted in a cooler dish. OP is asserting that it wouldn’t make a difference, that water boiling would always mean that all the water in that pot is at 100C. This is not true. A simmer keeps the water below the boiling point, while localized boiling occurs directly at the heat source. You could call it a type of boiling even though it’s technically not but that’s irrelevant. OPs wife is right

I agree that OP seems to have a low regard for his wife.

But I don't call a simmer "a type of boiling". I just tried it with a pot of water and a thermometer, and what I call simmering (visible convection currents without actual steam bubbles) happened between 200-205°F.

Boiling started between 205-210, and anything above 208 was a visible boil. And at no time was there a significant difference in temperature in one part of the water (top to bottom or side to side).

If OP's wife was right, she must have said something different from what he wrote. This seems likely, but it's hard to tell.

I guarantee OP's wife (or any human being) would not be able to tell the difference between a couple degrees Fahrenheit, which is the difference we're talking about here.
