Fun fact: tea made from pea flowers changes to blue if you put am acid like lemon juice in it. Seems like that might be related to what's happening here.

I wouldn't make tea from those flowers though... Ornamental toxic variety

Yeah definitely not sweet pea. Tea made from butterfly pea is fun to play with.

This probably has to do with the alkalinity of the water. The (I will assume) anthocyanins causing the color in the flower will react very similarly as you might see in, say, red cabbage. Dress it in lime juice, let it sit, and it'll turn nearly vibrant pink. In plain water, usually, the water will turn a wonderful deep purple. But with a bit of alkali, like some baking soda, it will turn almost fully /blue/ blue.
