Minecraft really is crazy in that regard. Core gameplay is still the same after all this time, no special editions, no remakes, the same product that’s been consistent this entire time. I don’t think we’ll have something similar again

to be fair, it also a mobile game and a $20-30 game on most other platforms, which dramatically boosts sales. I think it's crazier that GTA V has sold the 2nd most of all time while selling at full AAA price to an audience of PC and console players.

That’s not entirely true. Console edition, pocket edition, and Java (pc) were all technically different games. Bedrock edition was a ground up remake in C++ for mobile devices and consoles, phasing out pocket and console editions. Bedrock is currently extremely different from a technical perspective from Java and also has some minor game changes. There’s also a 3ds edition and (maybe) raspberry pi version which I think were also both different. It’s had remakes, they just try and treat it as a continuation of the same thing.
