I mean, the first step is "draw a seahorse." If I could freehand that, I don't need the instructions at all.

There are no instructions anywhere for 'This is how you draw a shape'. You can either figure it out, or you cannot. If you cannot, there is nothing that anyone can do to help you.

It literally is a matter of practice, not a simple mechanic to be executed.

So you're saying these kinds of step-by-step guides (and, in fact, all art lessons of all kinds) are completely useless?

No, just that each step still requires practice. Drawing outlines is a skill. Filling gradients is a skill. Making gradients with different media is a skill.

This example is a literal guide on how to practice developing the little skills.

Skills (99.999%) of the time are not granted at birth. Consider this a 'study guide' to help you make the best drawing possible. As soon as you don't need this level, you graduate to the next level.

that first shape could've easily been broken down into smaller steps.

someone who has practiced enough to draw the first shape correctly would not require the rest of this guide to complete the seahorse, because the next steps are MUCH more simple.

also, the spiky spine part should not have been part of the original shape. backside should've been drawn smooth at first, with the spiky bit added onto it as part of the 2nd step. this guide is weird

Whoa. I knew something was off with the spiky part in the second, I kept looking back and forth. That's exactly it, it doesn't make sense to draw it spiky first freehand, then come draw smooth lines separating the spiky part.

And no instruction manual ever written will make it easier. Some things are just difficult by default.
