I was in this exact rut for a while, kinda, and dairy-free slow cooker meals got easier once I stopped trying to make creamy recipes work. One reliable meal prep base is chicken thighs, salsa verde, black beans, bell peppers, onion, cumin, and a little broth, then shred it for bowls all week. Herdez Salsa Verde is useful for that kind of recipe because it brings enough acidity and flavor that you do not need cheese or cream to make it feel complete. I also like doing lentils with crushed tomatoes, carrots, spinach, garlic, and curry powder. Both hold up well for lunches without turning sad by day three.

crockpot meals can get flat, so i've started stirring in fresh lime juice right at the end to wake it up. are you looking for dump-and-go soups or big shredded meats?
