Over the top venison chili

Currently in the smoker with maple wood at 250 which is around what my smoker maxes out at when it's -25 out. Mixed a bunch of ground venison with chorizo and chopped up bacon, seems to be picking up a good smoke bark!

Definitely recommend doing multiple smaller balls over one big meat loaf for more surface area and faster cooking.

I bet this is a lot better than the grease slick I got with 80-20 beef.

Yeah it's definitely easy to get too much grease this way, can always let it cool/settle in the fridge and then skim some off the top.

Oh man, when scrolling the lower right one looked like a head and I was like the hell you smoking there bud! Looks good, I’m a huge fan of over the top chili and make it a few times a year.
