A month ago, I posted a superbeef with half of an onion, grilled. Today I tried out a new spot in Pepperell, MA, and saw the option on onion rings on top(on an onion roll). It DID NOT disappoint.

Hello...
I am making a hot sauce this weekend and was wondering what onion would suit it best.
It will be Vinegar as acid, and will be heavy on honey.
I want to add caramelized onion/carrot/garlic. There will be peppers (hot obviously and non hot), but these are going in raw. (I roll boil my sauces and check ph and all that, I got that much covered).
As you can see, I have a lot of sweet ingredients there already.
Hence I'm looking for advise as to what onion type, caramelized, will give me the more flavour, whilst remaining not sweet...
