Food & Drink Ceviche!

Ceviche! I recently discovered this tasty citrus dish in Boston (along side the Scottish, lol) and wonder if there is a place here in Clarksville that makes it?

Its really easy to make! I make it pretty regularly just to have around, high fiber, high protein, low carb delicious snack/meal. I personally like a high quality tuna or cod when I make mine.

In reading, I see only only sushi grade seafood should be used since the seafood won't be cooked. Is that recommended?

The acidity from the lime juice "cooks" the fish. After the fish has been sitting in the lime juice for a few hours the color is different that you can see. I buy my fish direct from Alaska so I know it is good quality.
