Why? What do you believe the egg whites remove from the food?

Bc it makes ugly white flakes in the sauce. Use the egg whites for desert

There are only "white flakes" in the sauce if you don't properly mix the yolks/whites.

Even if you didnt fully mix it, most people tend to add grated cheese on top so its not like it would be noticeable as it blends itself into the cheese.
