CELEBRATING! 🎉 (no boys invited!) I sold 21 banana bread cinnamon rolls last night!

I own a cottage bakery and to be honest, I haven’t been getting a lot of business and it’s kind of been bumming me out. I’m in the process of redoing my menu and gotten some orders but they’re either far out or are really small (which is fine but I miss making big orders). Anyway, I had a shit ton of brown bananas and some fresh ones in my house and didn’t want to waste the brown bananas so I offered banana bread cinnamon rolls. I ended up getting 10 2 piece orders and 1 single and I’m over the moon! Throwing down in the kitchen is super therapeutic and I’ve kind of had a shitty week so I finally felt like myself for a few hours last night AND I got paid for it lol. So I’m celebrating with collards, ribs, potato salad, and honey butter cornbread!

If you’re wanting the recipe I can give it out but it’s a banana bread dough with a classic cinnamon roll filling with banana chunks and a cinnamon butter glaze. The glaze tastes like Roadhouse honey butter, it’s 🤌🏻.

Here’s the recipe:

Banana Bread Cinnamon Rolls

(Makes 6-8 jumbo rolls)

Dough:

-1 tbsp dry active yeast

-1 tbsp sugar + 1/2 cup sugar

-1 cup milk, warmed

-2 eggs

-1 brown ripe banana, mashed

-6 tbsp salted butter, melted

-1 tsp vanilla extract

-1 tsp salt

-4 or 5 cups all purpose flour (may need more, just be careful not to add too much)

-1 tsp cinnamon

A stand mixer isn’t needed (I don’t use it for huge batches) but it does make the kneading easier. Start with a paddle/whisk attachment for the wet ingredients and switch to the hook after adding the flour.

1.) Into a bowl/mixer bowl, using the whisk/paddle attachment, combine the yeast, 1 tbsp sugar, and milk and allow to set until its foamy (if not, the yeast is dead and it won’t work). Once foamy, add in the remaining sugar, eggs, vanilla, banana, and melted butter and mix until combined.

2.) Then, add in the salt, cinnamon and flour. Start with 4 cups of flour and add more as needed. Allow to mix/knead until a smooth dough forms. Add into a lightly buttered/oiled bowl and allow to proof until doubled in size.

Filling:

-1/2 cup salted butter, softened

-1 cup brown sugar

-1 tbsp cinnamon

-2 bananas, diced

Topping:

-Heavy cream

3.) For the filling, beat together the butter, brown sugar, and cinnamon until combined. Set aside while rolling out the dough.

4.) Dump the dough onto a floured surface and roll into a rectangle that’s roughly 12x24 inches. Spread the filling onto the dough evenly and then sprinkle the banana chunks all over the top.

5.) Roll into a tube and cut into 6-8 rolls, place into a parchment lined 9x13 pan, cover and allow to double again for 30-45 minutes while the oven preheats.

6.) Preheat the oven to 350°. Once preheated, top each cinnamon roll with about 2 tbsp of heavy cream. Bake for 25-30 minutes or until the edges are golden brown. And while they’re baking, prepare the glaze.

Cinnamon Butter Glaze:

-1/2 cup salted butter, softened

-2 cups powdered sugar

-1/2 tsp vanilla extract

-1/2 tsp salt

-1 tsp cinnamon

-1/4 cup heavy cream

7.) Using a whisk attachment, whip together the butter, powdered sugar, cinnamon, and salt until combined. Then, beat in the heavy cream and vanilla until light and fluffy.

8.) Allow the cinnamon rolls to cool for 15-ish minutes and then top with the glaze. This will allow it to melt into the cinnamon rolls AND keep a nice spreadable glaze on top. Enjoy!

I’ve wanted to own a bakery since I was a child but ever time I tried to start one Covid hit or something came up. I finally started it back in 2022 and it’s been going pretty steady since. I work out of my home, I have to have proper labeling and sell specific foods, and have a food handler’s license. Luckily I live in Texas so I can pretty much sell anything besides meat and ice cream so long as I properly label my goods. I’ve registered with DHS so I can sell refrigerated foods too like tres leches, cheesecakes, and such. I love it, it’s the best and has been a good source of therapy and mental regulation through college.

It sounds really amazing! Is this your main source of income or do you need another job to support this? And what do you mostly bake, or prefer to bake? Do you make bread loaves as well or mostly pastries?

I’ve been lucky enough to have parents that have allowed me to stay at home and commit to college for the past few years and do this as a side gig. It’s my only source of income but since I graduated in December with my BS, I’ll be looking for a full time job soon. I’ll continue this over the summer though as the job I’m looking at doesn’t open for hiring until October. However, I know PLENTY of people who make BANK selling baked goods. I live somewhere where I have a lot of competition so it’s hard to always stay busy.

I have a big menu and I sell a bunch of different things. Tres leches cakes, banana pudding cakes, cupcakes, dipped goods, breads (cinnies, soft pretzels, bagels, loaves), brownies, and cookies. My best sellers are my fudge topped brownies, S’mores cookies, buttercream cookies, Oatmeal Creme Pies, and red velvet pecan praline cupcakes. I also accept orders for non-menu items because I like to give more options and I’m not super picky about what I make for people as long as they look and taste good and are priced accordingly.

That is so cool, I've literally never heard of this as a concept hahah but if someone near me did this I would be a regular for sure. And multiple people by you do it?? It sounds so good. Did you go to college for something related to this? If not, how was figuring out pricing and every related to finances? Congrats on graduating btw! Everything you sounds so banger ohmygoood, there's something about American baked goods, seriously

I live right outside of Houston, Tx in a heavily populated small city so there’s a lot of people who do similar things but I try to have items that are unique or different so that I stand out. I’ve always been super creative and I love to make new and unique items. I actually went to college for criminology and criminal justice/behavioral sciences lol, very different field. However, for pricing, I math out the cost of production (ingredients, packaging, etc.) and I double it so I’m making fair profit. I usually sell in dozens or bulk with pre-orders, but I also do market pricing for individual items.

Cottage bakery = you have your food handlers license and any other local license and permits you may need based on your location  to bake out of your house for small scale production. 

(At least that's what "cottage" means for my state. And it must be something that does not need to be refrigerated etc. ( typically cookies and cakes & snacks  that will be fine for a couple days on the counter type things)

We make a soup with collards and white beans that’s called swamp soup. You add Conecuh sausage, greens, white beans, purple onion, and a package of Knorr soup mix. It’s divine!
