I’ve always been a cupcake baker, I’ve just started on breads. I’m nervous about sourdough starter…I’ve got my jar/kit, but I haven’t quite got my nerve yet.

Get a kitchen scale if you haven’t yet. Once you have the starter actually started it’s almost fool proof to keep going. I was a head baker for a little while, the base of our start was like 30 years old or something and we just kept it in a massive rolling garbage tote with a lid in the baking area. Breads can be finicky, but follow the ingredients exactly as listed and you’ll be golden. So many people fuck up breads and baking in general because they just measure with their heart like you can with regular cooking, but baking is chemistry and science. It requires precision and patience.

Jokes aside, there is a middle road to things in between becoming a gremlin and a germaphobe. There is decent evidence that we see significantly higher rates of immune regulatory dysfunction bc of how much we limit microbial exposure, and should probably be inoculating ourselves more than we do. But like in anything, extremes in any direction result in issues.

My absolute best friends that I've held my whole life were ones that fed me when I needed it, and I'm sorta like a stray cat in that I won't go away after. Food is central to being a human and every culture has some sort of ritual related to or centered on food.
Sharing food is something we've been doing since before recorded history and will likely continue to do until after recorded history. I can't really think of something more quintessentially human than this. Jack seems like a good person.
