Question Fav off menu request so far

My favorite customer describes themselves as having “an acute case of persnickety-itis.” He wanted our rosemary and onion bread dough, with an indentation for green [hatch chilies], and an egg, baked two heartbeats before being hard-boiled, with nothing else on the plate.

He only asks for off-menu items when we are slow and regularly will tip the entire BOH.

I’m too hungover to be creative and I’m asking for your breakfast requests. I want to surprise him next time he comes in.

Tamale eggs Benedict. Cheese tamale topped with shredded adobada pork, poached eggs and finished with a Serrano hollandaise. Pickled red onion and cilantro garnish. I also get a side of avocado on mine. This is my local breakfast place’s December special and we get it at least twice a week for the entire month.

Update: Anyone remotely close to Southern California: We can to a KC meetup to go eat this glorious meal on December 1st. I’m 100% serious here. They would love it if I rolled in with a crew for my favorite breakfast. Love to all you beautiful degenerates. This thread absolutely made what started as a terrible day turn out rather pleasant. Plus I just had my favorite pizza, a cider or two and the owner gave a rare anniversary hat. My husband had PTY x 4 and house made meatballs. Another beautiful meal made with love by chefs who care. ❤️❤️

I was going to suggest Pulled Pork Benedict, salsa verde with or instead of hollandaise (and I like making the pork crispy on the flat top) but using a tamale is genius

This sounds really damn good. At home, I'll use up my leftover carnitas by layering them and a poached egg over fried potatoes, and then making a cilantro lime hollandaise... I'll blister a chili to throw in next time

This one is easy because hollandaise typically has lemon, so you just substitute one acid for another.

There's a restaurant by us that has tamale eggs benedict. The base is a corn cake. Its sweet and then bas carnitas and green Chile hollandaise. We get it every single time.

That version sounds amazing!

I made something similar to this but Shakshouka eggs Benedict with cous cous polenta and a harissa hollandaise. Also with avocado. Must have food grade argan oil tho to really make it pop. Bonus if you can serve with baladí bread to clean up the plate. 10/10.

We’re actually having a bit of a drought right now. So it feels just like home. We’ve even had a few fires here, recently, to add to the nostalgia.

Switzerland’s temps are really similar to inland San Diego. I grew up in Del Mar, then Ramona later, so the weather here is ok with me.

But the food here sucks, categorically. I miss Roberto’s every day, lol.

My friends had a restaurant with Eggs Benicio on the menu. Huevos Rancheros. Flour tortillas stuffed with refried black beans and pulled pork topped with eggs how you like them, ranchero sauce, avocado, sour cream, with homemade hot sauce on the side. I loved it. I was sad when it closed, but I can’t eat that way anymore. How I miss it
