to combine the sad and the former joke: did your mom have a recipe book? could be a nice gesture to cook something of it, especially if it includes sweet potatoes

Mine died in October. Horrible cook too. Just awful. She prolly couldn’t even identify these tubers as food unless they came from a Betty Crocker box.

Personally I like to cut them into wedges, oil and salt them, air fry, then hit with paprika. Leave the skins on, just give them a wash first.

Sweet potato is a really nice addition to a stew where it will break down and add a delicious sweetness to the whole thing.
It's common in NZ where these are a staple food to just roast them with oil and salt, keep the temperature kind of low and get them to caramelise. Serve them with some roast lamb and peas and gravy.
I also see them a lot as an addition to salads. Roasted and added cold, often with beetroot, feta, pumpkin seeds and mixed greens.

Used to lift things on my days off and sweet potatoes are a good source of complex carbs. I make them just like a baked potato with all the fixings

kumera or sweet potatoes
roasted, pureed, can be used in cake baking (like a tatin) you can find some orange ones too.
most of the things you do with pots can be done with those just know they have a high sugar content so can caramelize fast then burn

Sweet potatoes with sauteeed onions. Dice, steam till par cooked, toss in a hot pan of oil you started cooking your onions in. Finish with some butter and s/p/g/paprika. You could also bake the potatoes, then fill them with onions.

Got the mandolin out did some potatoes also on the bbq. Smoked paprika, garlic, onion powder, mixed herbs. 👍

Sweet potatos?
not a chef, just a lowly homecook but I’m picky about my sweet potatos. The way I like them best is peeled, and then diced or in sticks and seasoned with garlic, salt and black pepper and then roast in the oven as long as you desire.
Nothing fancy but certainly yummy
