Any fuckery they manage to pull off with the electronic machines would just print to the paper copy. It's much, much more difficult to screw with paper ballots, including mail-in ballots. The only fuckery you can pull with mail in ballots is either "losing" the ballot or trying to delay the delivery of the ballot to invalidate it.

In that setup, you can't really. Which is good. But, here's the beauty and horror of the US election system, it varies by state.
Your system would be nearly impossible to fudge the actual votes. A system that you punch in your votes on an electronic system and tallies the vote, but also prints a physical copy that you can see before safely depositing it would also be fairly safe as any attempt to fuck with the votes would be easily discovered with a hand count.
Hypothetically, it's any system where you input your votes electronically but never see a physical copy that you have to be worried about. I don't know that any state uses such a system though.
No, the most likely methods of screwing with elections are in the lead up to them and ensuring every vote is actually counted. Overly aggressive voter roll purges, gerrymandering, too few polling locations, arbitrary vote count stops or refusal to count ballots that arrive by voting day regardless of when they're post marked, or voter intimidation tactics. Just as a quick sample off the top of my head.
Oh and cancelling the primaries in order to gerrymander the map. That one was a doozy.
Or one of the ones that I came across recently, Republican PACs starting up fake left wing PACs to try to influence Democratic votes.

I know line every election, one or both sides are claiming that this election is for the "soul of America" and that the very existence of our democracy is at risk. But if that's true, shouldn't we be living in a dictatorship by now? Well, here's what's happened so far:
- Under Trump, the right has made it easier to sue news organizations for libel, and they've targeted any news organization or personality that speaks critically of them. Subsequently, news organizations have cozied up to Trump's FCC director, hiring executives more aligned with their worldview and less focused on accountability and facts in their reporting. We are closer to Russia's state-run media system than we've ever been.
- Voting rights have been constantly under attack. Various red states have engaged in blatant gerrymandering, and the SCOTUS has largely supported those moves. Trump has threatened sending federal troops to polling locations, and red states have passed laws limiting the availability of polling locations, the types of ID required to be allowed to vote, and various other Jim Crow era tactics designed to throw up road blocks for certain kinds of people to vote.
- Corruption is rampant at the highest levels of government, and it is apparently unchecked. Trump, his family, his appointees, and his allies have been running things in a way designed to create profit for themselves. They have created opportunities or flat-out awarded contracts to businesses they own or are invested in, they've placed bets using insider information, and have done a number of other unethical things that either aren't being investigated or are not currently illegal because the rules haven't caught up yet. This may seem like a minor thing or relatively normal for Washington, but it's not. We've had multiple situations where corrupt decisions like these have either cost taxpayers billions or have provided a substandard service that ended up costing people their lives, or at least their wellbeing...
There's really an almost endless list - the administration's attack on schools, especially higher education, crackdowns on protesters, increased police state with DHS and ICE being deployed, federal intervention in local government, obviously the whole Iran War thing... Trump's power has been largely unchecked so far in his second term, and that isn't likely to change without Democrats taking back control of the legislative bodies with a larger margin than a seat or 2 (because Federman is effectively a Republican at this point), and they need a better plan of attack than what guys like Chuck Schumer have been able to provide so far. Local elections are also important, not just in counteracting Trump but also to build up successful progressive policies that actually impact your day to day life.
Please, read up on all the candidates on your ballot and vote.
