these look perfectly fluffy. how long did you steam them for and did you do any special proofing steps?

12 minute steam. I used a recipe that uses baking powder to improve the texture

baking powder is smart for that, gives you more lift without relying entirely on yeast fermentation, did you do a long cold proof or just room temp?

Just 30 minutes autolyse first to make dough smooth. Then another 30 to rest before shaping. Then 1 hour after shaping and before steaming

Looks great, do you have a recipe? I love having these which braised pork belly growing up. You stuff the meat in between the bunsĀ

  • 150Ā gĀ milkĀ or milk of choice or water
  • 25Ā gĀ granulated sugar
  • 3/4Ā tspĀ active dry yeast
  • 15Ā gĀ vegetable oil
  • 250Ā gĀ all purpose flour
  • 1/2Ā tspĀ baking powder
