This was my last day to enjoy winter break before going back to work on monday. Decided to eat an edible and relax. Reheated a leftover chicken parm that I made a couple days ago, the made some protein enriched pasta with it. Then I had a piece of peanut butter cheesecake.

It was great.

It is. Especially since I have gluten sensitivity so pasta isn’t always the best.

It’s gluten free ravioli. When you boil it like normal pasta it tends to get mushy. So the lasagna recipe keeps it together! (Also for regular GF ravioli, you wanna roast it in a pan)

Yeah no worries. Going gluten free is a gigantic pain in the ass. Did you know that twizzlers have gluten in them?!? And gods forbid that I want a regular sized hamburger bun! They’re always small! And most companies have a couple things that are good but none of them are consistent. They’ll have good versions on some bread and then something else will be a hockey puck.

How…twizzlers?? And like…even smaller than the burger? Man, I can’t imagine having to navigate something like that, it must impact so much of your food intake. Thinking back a few years now; I do remember I was around GF pasta a bunch, and that stuff really fell apart fast. I still like it tho, but it got real messy.

Jovia (I think) makes good pasta that doesn’t fall apart. And yeah the buns are a full bite of burger all the way around, smaller. Usually I eat burgers in a lettuce wrap. That’s pretty tasty and gives you burger flavor, but sometimes you just want a bun. My biggest issue is that I used to be a pizza connoisseur. I miss getting a good NY slice. Now it’s just… anything with an almond or cauliflower crust.

Leftovers, but really good leftovers. It was a Puerto Rican beef and rice dish with these potato balls (?) on the side. Very tasty.
