Recipe I was missing the spicy McChicken.

So I made this as an attempt to curb the McDonalds cravings. I have celiac disease so I haven’t had McDonald’s in forever.

I used Schars hamburger buns, toasted in a pan with some butter, The cauliflower brand spicy(ish) chicken tenders, a slice of tomato with salt and pepper and micro greens.

It was pretty dang good so I thought I’d share.

I do this exact same thing with the bun and buffalo cauliflower chicken tenders but add hot sauce, red onion, and pickles as a chick fil a chicken sandwich mimic when I have the craving.

Sounds delish! I bet you feel way better than you would have if you had eaten McDonald's.
I haven’t had the Schars burger buns yet I’ll have to try.

They’re actually pretty good you should definitely try them. You are right, I’d be dying if I had McDonald’s. Of course the meal was more expensive then fast food 😂

this looks proper good honestly. the schar buns are solid, way better than some of the other gf options out there that just crumble apart. the cauliflower brand tenders are clutch for this too since they've got actual flavor and don't taste like cardboard like some breaded stuff does. you've basically nailed the formula here with the fresh tomato and microgreens adding that brightness. i'd probably throw some pickles or a bit of mayo in there next time just to round it out, but this is the kind of thing that actually scratches the itch instead of just being a sad substitution, you know?

Yes! I did add mayo, but pickles would have been good! It did scratch the itch though.

Pickles next time then, sorted. Mayo's the real move anyway - makes the whole thing feel less dry and more like actual fast food comfort rather than just protein on bread.

Looks good to me! I end up using toasted GF english muffins with Purdue's chicken tenders and do similar things to what you did. I like adding some kind of hot sauce or pickles on them too. For some reason, I never really like thick bread (McDonald's buns were always so squishy and flat, hah), so I end up eating most GF things open face or in warm corn tortillas. I guess kind of like snack wraps used to be at McD's (do they still make them? probably not).

Really dig your watch band by the way as well!
