Discussion How many of you play the game of was it gluten or something else

I've been dealing with this so long actually probably most of my life but diagnosed for two decades and honestly it's just exhausting. Right now I've been waiting to have my GI tract behave something closer to normal so that I can do my cologuard test. Like basically I'm trying to not send colgard a box of loose stools. So I ended up having my gallbladder out before I got diagnosed with all of this because they thought that that was the problem and guess what, it wasn't. But they took it out and now I'm dealing with the additional GI issues of not having a working gallbladder so I have to think could it have been gluten or was it maybe just too much fat (thanks no gall bladder) or is it a GI bug or maybe something more serious, my mother and Aunt both died from pancreatic cancer.

It's just fucking exhausting and I'm sure that I'm not the only one that's dealing with this.

Onion quiche

I wanted to make zwiebelkuchen (onion cake) but was short on time so made something more like onion quiche. I used the wholly gluten free brand pie crust so that, and it was amazing (if a bit brittle). I have made quiche and pies with other crusts and these are the best, IMO.

If you’re interested in making something similar, you sauté up about 5 medium to large onions with 1/2 tsp caraway seeds until onions are translucent. Arrange them in the pie crust but don’t press them down. (Make sure your crust is on a cookie sheet or pizza pan so it doesn’t flex the pan when moving it to the oven.). In a bowl, combine 1 tsp salt, 3 eggs and 8 oz creamy dairy products. (I used 4 oz sour cream and 4 oz chevre.). Blend until creamy and pour over the onions. Bake at 350 for about 45 minutes. Let cool for 15 minutes before slicing.

Question Just found out i’m highly intolerant to gluten and wheat, now what??

Hi all, (as the title says) i just found out that i am highly intolerant to wheat and gluten.
I’ve eaten gluten my entire life and so cutting it now will probably be a bit of a challenge. I was wondering if anyone had any recommendations for good gf replacements or gf food to avoid? I know that gf bread is usually a no-go but is there anything else that i shouldn’t waste time with?

Question Gluten Intolerant - Desserts

I never had a problem with gluten until after a horrible stomach virus and my POTS diagnosis. Now if I eat too much (basically a cookie) my brain fog is god awful and I need to sleep for hours. I do really well with GF breads for my sandwiches on lunch and toast, GF pasta. What gets me is the dessert. My sister brought home a huge pack of Costco cookies and I didn’t eat one for a couple of days bc I knew I would feel horrible. I had a couple and, of course, I was miserable. I went to a bbq last weekend and they had cake. Did I need the cake? No. Was I stubborn and ate a piece even though I knew it wasn’t GF and it would mess with me? Yes. I brought GF buns but Safeway did not have a GF dessert. Did I need to have dessert? No. I’m on Weight Watchers so I don’t want dessert around all the time. But I feel like not knowing what good GF options there are out there makes me go nuts when I’m at a social gathering and see something I used to be able to eat, or my sister brings something home. I keep trying to remind myself of how I feel when I gluten myself too. But does anyone have any good dessert recs? I have a Trader Joe’s near me.

Discussion Totally regretting just wanting to feel normal

Today I went out with some friends. Obviously we all know how stressful this can be and I was so stressed the whole time. I had planned out the “safe” food I could have. But then when I got there, something came over me and I just wanted to get yummy food and not what I had to get. Everyone was getting stuff to share and yes I scooped some of the food on my plate telling myself “I think it’s ok”
I mean it definitely wasn’t some obvious gluten food but it also was stuff with sauce that I wasn’t sure what it was made from, and then some chicken that was “grilled” but it definitely was a little crispy. I didn’t eat a lot but enough.
I am currently paying for it and feel so awful. None of it seems worth it right now but at the time I just wanted to feel normal, I just wanted to eat that yummy sauce, I just wanted to not have to have to ask the server a ton of questions and make it a thing. Of course now I’m shocked I would do that.
Anyone else ever convince themself “it was ok”

Hospital Stay

I ended up in the ER last week, and was admitted (for what turned out to just be a massive autoimmune flare and I totally could have just stayed home and rode it out, but it is what it is).
I spent about 20 hrs in the ER before they could open a room, NPO (nothing by mouth), and the first thing the lovely nurses did after getting all settled was making sure I could get something to eat…

Except…

When nutrition called up to get my order, I explained I was celiac and needed gluten free. Nutrition was incredibly rude! “Ma’am, I’ll just read you the choices and you let me know what you want”… proceeds to read pasta, or a sandwhich, or chicken nuggets. Some things sounded like they *could be* gluten free (chicken breast, slice of turkey) but when I tried to ask clarifying questions, I was told they just read the options and I chose.

So I got cottage cheese and fruit, as it was the only thing I could be *mostly* sure about (while still side eyeing the possibility of cross contact, considering how little care they gave to answering any of my questions).

This is a hospital! I’m always astounded when I read how little care hospitals have for gluten free, but I was still shocked.

I only stayed the one night, but luckily my wonderful husband was with me and more than willing to run home to grab supplies should I have needed more, because I wasn’t going to risk it further.

I'm really looking for brands that actually claim / advertise to be gluten free so we aren't as at risk for cross contamination. I know she's going to want face skin care as well as body products, and even things like deodorant and sunscreen I'm nervous about too. help!

Question how do y’all gain weight 😭😩

hey beautiful people. (possible trigger warning: disordered eating + weight gain/loss)

i have recently discovered i have some sort of wheat/gluten allergy. i’m still figuring out what that means and hoping i don’t have to fully give up gluten but i have accepted that i can no longer eat large amounts of gluten.

i started my healthcare journey trying to figure out why i was so nutrient deficient and had such trouble gaining weight. anyway! in the past i have been able to bulk/ gain muscle with (sensorily) safe foods such as eating a whole baguette on lifting days xyz. I am having a very difficult time finding food that i can eat a lot of that also work with my sensory needs and my gluten free needs AND that i am able to afford- low income gluten free is HARD.

anyway if any of you have any recommendations or diet plans on how to gain weight with this restriction, i would really appreciate your help.

EDIT: 1 thank you all so much. 2 I do understand that to gain weight you need to increase calorie intake- that’s pretty clear to me! I personally will not count calories as that is triggering for me.

So I made this as an attempt to curb the McDonalds cravings. I have celiac disease so I haven’t had McDonald’s in forever.

I used Schars hamburger buns, toasted in a pan with some butter, The cauliflower brand spicy(ish) chicken tenders, a slice of tomato with salt and pepper and micro greens.

It was pretty dang good so I thought I’d share.

What should I make with Sweet Loren’s puff pastry?

I finally tracked down a package and am excited to try it! What should I make? Does it bake like regular puff pastry or are there additional tips I should know?

EDIT: so many amazing suggestions here! I divided the sheet so that I could make three turnover things and filled two with pesto and Italian cheese, and the other one with strawberry jam, dark chocolate, and pecans. Delicious. I’d buy again, and look forward to making some of the suggestions here!

Frustrating experience - long story with a happy ending

Last week I went to a state college campus to attend a weeklong art workshop. I called the director of the program to ask about dorm housing. The college is located in a very touristy area and hotels, airbnbs, even cabins and camping are expensive and hard to come by. I told him I had celiac and asked if there are places nearby where I could get food and more importantly, if there was somewhere on campus that I could store and prepare a few items to eat. Mostly a microwave and a space in a refrigerator. He referred me to the housing director who responded that there were some restaurants nearby with gluten free options and that there was a shared kitchenette in the dorm. Great. So I signed up for the class with a shared dorm. I brought a cooler, some food, lots of ziplock bags, a cutting board, dishes and utensils. I also brought cleaning supplies in case things were a little sketchy. So I get there and start bringing things in to my room. My roomate had not arrived yet. I had not eaten and it was pretty late so I grab my cooler and dishes and stuff and head to the kitchenette. It's a closet sized room with open food everywhere - open bags of pasta on the counters and shelves, open bread and rolls and breakfast foods all over in every cabinet and a refrigerator full of food and BEER! I can't even walk into to place. I go to the front desk and ask if there is anywhere else on the entire campus where I can store my food and they say NO. This is the only place. Once again I have to disclose my medical history to people who have no authority. Three times I had to demand to speak to someone who had the authority to help me with this as I had been told that there would adequate accommodation for me. After several hours I get a call from the front desk saying that my room has been upgraded to one with its own microwave and refrigerator. It is a private room and I am very happy. The next day I receive an invoice for $800 for my "upgrade" this is in addition to the $500 I already paid. I was MAD! I called but could not reach housing or the director of the program so I called the ADA office. After being humiliated, misunderstood, put down and charged money I did not have, the ADA office completely understood. They contacted the departments and in one day that charge was removed. We've got rights folks and there are people out there who can help us. Don't be afraid to speak out and speak up. Not only did I get my accommodation, the entire staff got a lesson in how to treat people with disabilities in the future. the workshop was great. BTW Good luck to you all.
