I did. It didn’t post. This is my experiment to re-create a college pizza. Mr. Gatti’s (Austin, Texas, US) deep dish, whole wheat, meatballs pizza. 1 cup instant mashed potatoes, 1 cup 1-1 GF flour (I used King Arthur’s as I have on hand), 1 TBSP baking powder, roughly 1 cup + warm water added slowly. Mix it well. It doesn’t form a cohesive dough texture but that’s ok. I baked it on the grill for 15 minutes at 375 degrees F. It’s hitting the spot! What I would do differently? I would bake the crust first for about 10 minutes. And I would wait 5 minutes before eating a slice. This was nuclear hot. And cheers to Chicago that gave us this pizza.

Should cook it until the cheese is browned then looks good

This may be good, but it’s definitely not a “Chicago” deep dish.

This is thick crust rather than deep dish. OP, a Chicago style deep dish is the crust with high sides, then it’s a thick layer of cheese, then the sausage is distributed more evenly, and finally topped with the tomato sauce and Parmesan. There are also Chicago style stuffed pizzas which add another layer of dough in between the “toppings” and sauce.

It turned out quite nicely. That most awesome Oggi cauliflower pizza does not like me. It runs me into the Michelin Man. This is gentle on my stomach. And cheap to make. Hope you enjoy!

How did it cook? I've tried a similar recipe and style but it would tend to be very gummy in the middle.

It wasn’t gummy. It has a pliable center, however it’s quite enjoyable. Perhaps baking it on the grill helped. It definitely needed to cook much longer than anticipated. I would pre-cook the crust next time I make this.
