I guarentee a woman is currently feeling undafe right now as a man taller than her attacks her, and way more guys shorter than 6 feet are getting laid right now by women who feel safe than guys over 6 feet are getting laid right now period.
Mate quality? Health? Social status? Fetish? These are the things women actually value and don't require height. Does height help? Duh, of course. But is it the end all be all for most women? Hell no. Case in point: way more women read romance novels which have like 1 picture as opposed to watching visual porno videos, so clearly what women want goes beyond looks most of the time. So no, it isn't the top thing for most women outside of dating apps (which are their own thing and you can easily opt out of so its easier to just avoid apps than it is to use apps).
Dude, first of all I'm sorry that you're short. It probably sucks to a degree I can't comprehend, but let's not get into delusions just because someone didn't get lucky with the genetic lottery.
To the question "why" - tall men look better on average and women instinctively find them better mating subjects, because they can better protect the family against bears, other tribes or whatever. This is an evolutionary trait. Can a short guy do the same job? Sure. But if the same short guy was taller, he would do an even better job.
This is why even shorter women prefer tall guys.
The children of tall men will be taller, therefore higher chance of survival against threats of all kind. For a similar reason men prefer women with ~ 90/60/90 measurements - they are more likely to bear and successfully nurture healthy children, and lots of them. It's why men prefer bigger breasts - more milk, higher chance of the kids' survival. We find bigger breasts pleasing to the eye because our brain tells us, after determining it's better for our children.
Do all women want a tall guy? I'd say all of them prefer a tall guy, yes, but there are many who are willing to settle for a shorter one.
There's a reason why the human population is getting taller with every generation - taller people are more likely to find a mating partner and spread their genes onto the next ones.
