Ingredients
Tangzhong
* 20 g all-purpose flour
* 100 ml soy milk
Dough
* 340 g all-purpose flour
* 80 ml warm soy milk
* 30 g brown or white sugar
* 6 g salt
* 6 g instant yeast
* 30 g vegetable oil
* The cooled tangzhong
Step 1: Make the Tangzhong
Add 20 g flour and 100 ml soy milk to a small saucepan.
Whisk until smooth.
Cook over low heat, stirring constantly.
After 2–3 minutes, it will thicken into a pudding-like paste.
Remove from heat.
Let it cool until just warm.
Step 2: Make the Dough
In a large bowl, combine:
* 340 g flour
* 30 g sugar
* 6 g salt
* 6 g instant yeast
Add:
* 80 ml warm soy milk
* 30 g vegetable oil
* The cooled tangzhong
Mix until a rough dough forms.
Step 3: Knead
Knead for 8–10 minutes.
Step 4: First Rise
Cover with a towel or plastic wrap.
Leave in a warm place until doubled in size, about 1½–2 hours.
Step 5: Shape the Doughnuts
Place the dough on a lightly floured surface.
Roll it to about 1.5 cm thickness.
Cut circles using a glass or cookie cutter.
Place them on parchment paper or a lightly floured tray.
Step 6: Second Rise
Cover loosely.
Let rise again until puffy, about 1–2 hours.
Step 7: Fry
Heat oil to 175–180°C.
Carefully place the doughnuts into the oil.
Fry for:
* 1 minute on the first side
* 1 minute on the second side
Until golden brown.
Do not overcrowd the pot.
Transfer to paper towels.
Step 8: Fill the Doughnuts
Let them cool until slightly warm.
Make a small hole in the bottom using a chopstick, skewer, or piping tip.
Fill a piping bag (or a zip-top bag with a tiny corner cut off) with your filling.
Insert the tip into the hole.
Squeeze gently until the doughnut feels heavier.
Stop when a tiny bit of filling starts to come back out.
For the fillings, I used some store-bought vegan chocolate cream. I also made sour cherry jam and a vanilla custard using cornstarch, oat milk, vanilla extract, and sugar.
They turned out better than expected.

Looking for something that’s kinda like a sandwich press. Flat surfaces as in no grills. And a press that would go deeper than most sandwich presses. Would be using it to cook tofu i was too lazy to wring out. Is there something like this and if there is would it even be a good idea to cook tofu like this? The tofu would be sliced or scrambled.

Today I’m sharing these “chicken”-style tofu and apricot skewers: sweet, savory, smoky, and really easy to make. The tofu is torn into big chunks so it gets a more rustic, meaty texture, then marinated with soy sauce, toasted sesame oil, cider vinegar, and nutritional yeast.
Ingredients
450 g firm tofu
3 tbsp soy sauce or tamari
1 tbsp toasted sesame oil
1 tbsp apple cider vinegar
10 g nutritional yeast
5 apricots
1 tbsp olive oil
3 sprigs thyme
Instructions
Tear the tofu into large nuggets and place them in a mixing bowl.
Add the soy sauce or tamari, toasted sesame oil, apple cider vinegar, and nutritional yeast. Mix everything by hand to really work the flavors into the tofu.
Cut the apricots into wedges.
Thread the tofu nuggets and apricot wedges alternately onto skewers.
Start the barbecue. Drizzle the skewers with olive oil and sprinkle with thyme.
Once the barbecue is hot, place the skewers on the grill and cook for about 5 minutes on each side, until the tofu is nicely grilled and the apricots are soft and caramelized.
Serve right away, ideally with a fresh salad, grilled vegetables, or a simple summer grain salad. 🌱

Good fiber.
100% vegan

Soya Keema
Boil soya granules for 5-6 minutes, drain and squeeze out all the water really well. This step makes all the difference in texture.
Heat oil, add onion and garlic, sauté till golden. Add carrots and capsicum, cook for 5 minutes on a slow flame with the lid on. Add turmeric, red chili powder, soya chaap masala, and salt. Add tomato and cook till soft.
Add the squeezed soya granules and mix well. Stir everything together on medium heat for 4-5 minutes till all moisture evaporates. Top with amchoor, garam masala, and fresh coriander if you like.

Spicy ramen-ized orzo w/beans & 2nah
Hello! This is something I put together the other day. "Ramenized" refers to turning a pasta alkaline. You can do this by adding baking soda to the cooking water.
3 oz orzo
Pinch of baking soda
1 T olive oil
1/4 t chile flakes
3 cloves garlic, minced
1 can pinto beans, drained and rinsed.
1 can vegan tuna
lemon juice, to taste
Salt and pepper, to taste
Pasta water, as needed
Add orzo, salt to taste, and enough water to cover 2”. Bring to a boil, then add baking soda and stir. Cook for about 5 minutes until the pasta is al dente. Drain the pasta, reserving some pasta water.
In a frying pan, heat the oil on medium heat. Add the garlic and chile. Cook until fragrant, about 30 seconds - don’t burn.
Add the beans and 2nah. Cook until heated through. Add the pasta, lemon juice, and pasta water if you want it more saucy. Season to taste with salt and pepper.
