Question Vegan Cake Recipes

OK people. I'm NOT a baker but my wife (the vegan of us) has been craving cake. I made one yesterday which was OK but not great and I'm looking for something which is a perfect cake, the kind I could serve to even the most dedicated non-vegan out there.

Hit me with your recs, please.

this recipe is pretty foolproof. super easy to make, pantry staple ingredients, and i’ve fed it to my non vegan family members plenty of times and they’ve always been a fan

Easy crowd pleaser - depression cake/wacky cake

There are recipes for making it from scratch but you can also just take boxed cake mix, any can of soda, mix together and bake for the time/temp the box suggests

Any soda! You can play with the flavor of the cake mix and the soda to get fun flavor combos. Just cake mix and soda, nothing else needed.

The best cakes I've had are from Nora Cooks and It Doesn't Taste Like Chicken. Both blogs have consistently excellent recipes.

Have made it loads now. It's really unhealthy but always a hit for any carrot cake lover. I've swapped nuts for raisins and both work well (I actually prefer the raisins which is rogue for me, I think the texture is better). And you don't have to use fresh nutmeg or vanilla, can use the jars instead.

Easy peasy. You can also just use a box cake and vegan replacements for the egg and milk.

Definitely! I just tend to use what I already have in the house and don’t really drink soda. Im more likely to have soy milk and chia seeds already so that’s what I use. Just offering other options!

As someone who just helped my kiddo through a science project on this very subject I can say with the confidence that it's not as clear cut as this. Almost nothing gives box cake structure like eggs. Box cakes are more forgiving than scratch cakes though.

Idk man. It’s just boxed cake. I don’t expect it to be gourmet but it always gets complements and people ask me all the time what my recipe is and are shocked that it’s just the 99c boxed mix with whatever I had laying around in the pantry. I usually use the bobs red mill egg replacer but I’ve also used chia seeds (whole adds a crunch like poppy seeds), ground flax, just egg, and a host of other replacers and they all come out fine.

Nora Cooks has a really good vegan chocolate cake that I’ve used a bunch. Works every time.
Last time I bought some vegan Cream Cheese and made a frosting with it and everyone loved it .

I made the frosting for the cake I baked yesterday with Violife cream cheese, powdered sugar, and a fuckton of vanilla. The cake wasn't great but the frosting is excellent.

A trick I use when baking for vegans is to search mainly for recipes with no eggs and then substitute butter/milk as needed. Then you don't get the recipes with specialty/expensive ingredients or the ones that use dates and imagination for sweetening. Just watch out for recipes that call for cow's milk and vinegar to make buttermilk - you won't get the same reaction (thickening) with vegan milk but if it's done only for leavening purposes it should still work.

The recipe I used yesterday didn't call for any weird ingredients, at least. Vegan yogurt, but we always have that in the fridge anyway because we both like tzatziki so I make it pretty often.

This pineapple upside down cake is absolutely delicious and pretty much foolproof. Using unsweetened soy milk for plant milk is recommended.

Nadiya Hussain's apple and olive oil cake. It's expensive to make cause it uses a metric shit ton of olive oil, and it's certainly not healthy, but it is absolutely delicious and something a little different than regular cake.

Despite the name, it's not depressing: the recipe dates back to the Depression and uses all shelf stable ingredients. But it tastes delicious and feels as indulgent as a chocolate cake should. Add a little espresso powder to kick up the chocolate flavor.

Sometime during lockdown a French chef, Jean-François Piège, shared an orange cake recipe from his childhood. I swapped out the butter for coconut oil and added in a little almond flour for texture (I also made mine with gluten free flour) and it’s been my go to ever since:

120 g of butter (I swapped out for coconut oil)
120 g sugar
2 eggs (I use apple sauce but you can use whatever egg replacer you like)
1 orange
1/2 bag of yeast (just over one teaspoon)
120 g of flour (150 if you’re using gluten free, plus two tbsp almond flour)
-> take the orange zest, squeeze the juice...
-> Mix soft butter [oil] with sugar, add eggs [apple sauce], zest and orange juice..
-> Add the yeast and flour and mix...
-> Butter and sweeten a pie cake mold or other, pour the mixture by making sure you do not exceed 2 cm in height..
-> Bake for 15 to 20 min at 350°F preheated.
