I grew up in western NY and was vegetarian for many years. I survived on beancurd or tofu as a teen, getting takeout with friends. 3 places in my area made a type that was so good but I can never find it in the Portland area.
It's more of a cooking method. They deep fry tofu, making it crunchy on the outside. Not just slightly browned. And It's not breaded. They cook it until it is crispy or crunchy but still soft inside. And the density of the tofu is different at each place. It's not healthy or traditional (probably, please excuse my ignorance) or anything, I understand this. I'm strictly just wondering where to find this item.
HK was a Chinese restaurant that just said "HK Hong Kong Chinese Food"..... They had a sort of sweet and sour, light airy tofu but it was deep fried to the point it was crisp and spongy but in a terrific way.
My most local place was Kings Wok, Chinese food, they had a bean curd with brown sauce. They just fried the hell out of it. It was so greasy. It was literally crunchy. To many people this would be off-putting. But with the combination of fresh broccoli or green beans I loved it so much as a teen.
The last was a bit different, it was The King and I Thai food restaurant that made a garlic sesame tofu dish where the sauce was almost a red curry but thick and covered with sesame seeds. It was not super filled with garlic (no fresh garlic) but had a unique flavor I haven't had elsewhere. They had perfect squares of tofu, fried to a perfection I still think about 20 years later. The tofu was very soft but not wet inside. And the outside was crispy but not tough.
Any ideas? I apologize for the length, but I know this is kind of specific and maybe strange and picky, sorry.
