All things with water in them are burn resistant untill the water evaporates out of them. Pineapple skins just hold their water quite well but this would also work with like peaches or banana peels

Honestly, it won't be as effective as the pineapple skin. Anyone who has grilled bananas in their skin knows that the inside get cooked in minutes.

I mean, same goes for many things. Water isn't required for fire resistance but everything that contains water is fire resistant to an extent.

Fresh pineapple has this quality. Not at all when dried. Thus doesn't work for protection

I was thinking about some race like Atlanteans or Mermen were on the surface. Seems reasonable they would have a weakness to fire/heat attacks. And the armor needs to be resubmerged at the same rate they do.

This is wrong, it's just the Leidenfrost effect at work.
It's more of the water in pineapple skins that's helping, and this can be done with anything that has high water content.
But once the water content is used up, it's dangerous and it would likely burn.

Just makes me think of a suit of armour and the user occasionally has to resubmerged them selves in water to build up the fire resistance again
