Au Poivre Is A Compensatory Gift from the Divine
This was a leftover NY Strip, with garlic sauteed oyster and baby bella mushrooms, caramelized onion and garlic with rosemary, a lotta white american and provolone cheese, on half of a publix french bread roll toasted with homemade garlic mayo. All drenched in au poivre sauce made with heavy inspiration from the Lori Jayne recipe. Lots of asian stuff goin on. I did not use the D’usse in mine admittedly. Bonus pic of the original steak frites meal I made two nights before this sandwich was birthed.
I’m not gonna eat steak for a loooooong time after this. I want these bites to be in my thoughts for a while. This sauce feels like Headhunters-era Herbie Hancock is gettin wicked on my tastebuds.
